Bruna Tadini
6 tomates italianos (6 italian tomatoes)
1 cebola branca descascada e picadinha (1 white onion, peeled and finely chopped)
2 dentes de alho sem pele fatiadinho (2 cloves of garlic, peeled and finely sliced)
sal marinho e pimenta do reino moída (sea salt and freshly ground black pepper)
azeite de oliva (extra virgin olive oil)
4 punhados de queijo parmesão ralado (4 big handfuls of freshly grated Parmesan cheese)

500g de batatas (500g of potatoes)
1 ovo inteiro e 1 gema (1 whole egg and 1 yolk)
300g de farinha de trigo (300g all-purpose flour)
20g de manteiga sem sal (20g of unsalted butter)
sal marinho (fine grain sea salt)

Reserve.
(Fill a pot with water, put the tomatoes inside and then bring to a boil. Cook until the peel is loosed.  Drain the hot water and run cold water over them, then slide the skins off, squeeze out the seeds, and roughly chop. Sauté garlic and onion in olive oil and add your fresh tomatoes, with a small glass of water. Bring to the boil and simmer for around 20 minutes. Now put some of them through a food processor or blender to make a loose sauce, and again to the pot. Tear your basil leaves into the sauce and correct the seasoning with salt and pepper. Save it.)

(Fill a large pot with cold water. Salt the water, then peel and cut potatoes in small pieces and place them in the pot. Bring the water to a boil and cook the potatoes until tender throughout, this takes roughly 40-50 minutes.)
Escorra as batatas.
(Remove the potatoes from the water and drain them. Mash the potatoes when they are hot. To do this you can either push the potatoes through a ricer or deconstruct them using the tines of a fork.)

(Let the potatoes cool spread for some minutes and then pull the potatoes into a bowl, doing like a volcano. Add the egg, yolk and 3/4of the flour across the top. Incorporate the flour and eggs into the potatoes. With very gently touch knead the dough. This is also the point you can add more flour (a sprinkle at a time) if the dough is too tacky. It all depends on the potatoes, the flour, the time of year and the weather. This is the secret! Unfortunately there isn’t a exactly amount of flour to use, you need do discover it! The dough should be moist but not sticky. Cut it into pieces. Now gently roll each one of dough into a snake-shaped log, roughly the thickness of your thumb. Use a knife to cut pieces every 3cm. Dust with a bit more flour.)

Sirva imediatamente.
(Put some salted water in a deep and large pot, and then bring to a boil. Cook the gnocchi in batches by dropping them into the boiling water roughly twenty at a time. They will let you know when they are cooked because they will pop back up to the top. Fish them out of the water a few at a time with a slotted spoon ten seconds or so after they've surfaced. Place the gnocchi on the platter. Toss with sauce, fresh basil and grated Parmesan cheese. Serve immediately.)
